For the Love of Pho

Ginger Deli, in downtown Ann Arbor, that packs colorful flavors with a dash of Vietnamese style, is back after a two-year hiatus at 203 East Liberty Street. Each Ginger Deli dish presents a harmonious composition of fresh herbs, spices and protein. This medley not only creates a very balanced and memorable flavor, but also offers a lighter and healthier alternative to the typical Western fare. Banh Mi (beef, pork, chicken and vegetarian) is a Vietnamese sandwich on French bread with pickled vegetables and pho, a rich bone broth served with rice noodles.

            Owner Te Phan, with a background in industrial design, perfected the packaging and branding, and developed a stationary restaurant with communal work space. The Ginger Cube is a portable hot-and-cold prep station that can be packed up and transported to farmers’ markets and events or set it up in the middle of their clean, bright environment. The restaurant’s pho takes about 40 hours to cook in a huge pot in the offsite kitchen.
